Tofu and Kale Stir Fry

Makes enough for 1 big stirfry or two small ones
Details
Ingredients
- 1 Tofu 1 firm block, cut into strips or rectangles
- 1 bunch Kale washed and cut into 1/4
- 1/4 head small red cabbage cut into 1/4
- 1 large Onion cut in half and sliced in 1/4
- Canola or peanut oil for frying
- stirfry sauce
- 2 tablespoons dark miso
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 3 cloves garlic minced or through a press
- 1/2\\ piece ginger finely grated
- 1 tablespoon toasted sesame oil
- 1 tablespoon sriacha sauce or other asian hot sauce
Directions
Put all the stirfry sauce ingredients in a bowl and stir until well combined. It will keep for at least 2 weeks covered in the fridge. Prep the veggies as directed above. Heat 1 T. oil in a large fry pan or wok on medium high heat. When pan is has reached almost smoking point, place the cut tofu in a single layer and fry until golden brown, about 5 minutes. Turn and cook other side for another 5 minutes. Set aside on paper towels. Add another 1 T. oil in pan and bring up to smoking point. Add the onions and cook until wilted but not too soft, about 3-4 minutes. Add red cabbage, kale, tofu and ½ c. stirfry sauce. Bring the heat up to high and stirfry for 3-4 minutes until the veggies are bright and tender-crisp. Serve over piping hot rice.
